What you’ll need
1-16oz package 15-Bean Soup (dried beans)
8 cups low-sodium chicken stock*
½ onion, chopped
½ tsp sea salt
½ tsp garlic, minced
2 cups chicken breast, cubed*
Simple Prep
1. Open dried beans, throw away seasoning packet!
2. Soak dried beans in water overnight or at least 8 hours
3. Combine all ingredients together in crock pot
4. Cook on high setting for 5 hours
Chef’s Serving Suggestions
*Use vegetable stock and substitute extra firm tofu to make this a vegan dish. Stir in cubed tofu or tofu noodles 5 minutes before serving.
Many of the beans will cook down and make a thick broth. To add more beans, stir in 1–2 cups green or red lentils with about 2 hours cook time remaining.
Great meal for a cold fall or winter day!
