Bean Sprout Tomato Salad

Serving Info

• Makes 2 lunch servings or 4 side salad servings
• Serving size: 2 cups lunch, 1 cup side salad
• Total time: 10 minutes

What you’ll need

5 Roma tomatoes, cubed

½ cup red onions, minced

1 cup fresh bean sprouts

1 cup black beans, drained and rinsed

1 cup fresh baby spinach, chopped

2 Tbsp olive oil

1 Tbsp plus 1 tsp white wine vinegar

¼ tsp sea salt

Simple Prep

1. Combine together tomatoes, onions, sprouts, beans, and spinach

2. In a separate bowl, whisk together olive oil, vinegar, and sea salt

3. Toss salad with dressing and serve

Chef’s Serving Suggestions


This salad is great served sprinkled with feta cheese.


OK to make ahead of time and store covered in the refrigerator, with dressing separately.
Serve immediately after tossing with the dressing to avoid soggy spinach.
