I’m not familiar with gluten…Is it healthier to buy and cook gluten-free?

The Chef’s Answer

Gluten is found in almost all processed foods, as well as anything containing wheat. Some people have a sensitivity to gluten due to food allergies. If you are allergic to gluten, you should avoid it at all cost. There is lots of research out there to show you what is happening inside your digestive system if you are allergic to gluten and continue to consume it, but I won’t take up space here to lay it all out. If you are not allergic to gluten, there is no harm in it at all. Some gluten-free flours and pastas are higher glycemic than 100% whole wheat flours and pastas.

So gluten-free doesn’t necessarily mean healthier, unless you are one who needs to omit it from your diet.
