What you’ll need
2½ pound turkey breast, on the bone
1/8 tsp sea salt
1 Tbsp coconut oil
1 Tbsp whole grain mustard
2 Tbsp whole wheat bread crumbs (Ezekiel Bread preferred)
Simple Prep
1. Heat oven to 350°
2. Remove bone, skin, and excess fat from turkey breast
3. Sprinkle 1 pinch sea salt on each side of turkey breast
4. Heat coconut oil in a 12” skillet over medium-high heat
5. Once oil is hot, sear turkey breast 2 minutes on each side, or until golden brown
6. Remove from skillet and place on a broiler pan, skin side up (the side that was covered with skin)
7. Evenly spread mustard on the skin side (facing up) of the turkey breast
8. Sprinkle with bread crumbs, covering mustard
9. Bake uncovered 50 minutes, or until center reaches at least 165°
Chef’s Serving Suggestions
Ezekiel Bread is made from sprouted whole grains. The sprouted whole grains offer much more nutrients than regular whole wheat bread. To make bread crumbs, toast one slice of the bread and then place in a food processor. You can also use wasa crackers to make the whole wheat, low-glycemic bread crumbs
This mustard crusted turkey is great served with any vegetable, especially steamed broccoli or carrots.
