So, how do you feel about cooking salmon?
Many people seem scared, or at least a little worried when it comes to cooking fish, especially salmon.
Honestly, there is no need to be worried, it’s really very simple.
This recipe is an easy way to prepare the salmon and have a restaurant style meal on the table, and it will make you look like a world class chef.
I use a great deal of garlic in this recipe, but if you’re not so much a fan, feel free to reduce the amount.
Ingredients
Potatoes
5-6 small new potatoes per person
3 cloves of garlic
30g butter
Salt
Black Pepper
Salmon
1 salmon fillet per person
5 cloves of garlic
20g chopped parsley
20g chopped dill
20g chopped chives
2tbsp olive oil
Juice of 1/2 lemon
Salt
Black Pepper
Asparagus
8-10 asparagus tips per person
1tbsp olive oil
30g grated parmesan cheese
Method
Preheat your oven to 220 degrees celsius/ 430 degrees farenheit
Ensure that the potatoes are clean and have no bad bits.
Place in a pan of cold water and bring to the boil
Simmer for 20 minutes
While the potatoes are simmering, we can prepare the garlic and butter for the potatoes, and the herb & garlic coating for the salmon
Finely chop the 3 cloves of garlic and add to the 30g of melted butter.
Add a little salt and black pepper
Finely chop the 5 cloves of garlic.
Also chop the parsley, dill & chives.
Place all of them in a small dish, add a little salt and pepper, and 1tbsp of the olive oil and lemon juice
When the potatoes have cooked for 20 minutes, drain them
Place on a baking tray and gently crush with the back of a spoon
Drizzle the garlic and butter over the potatoes and place in the preheated oven for 20 minutes
To get the timing right, you need to do the next step in 5 minutes maximum
Now place the salmon and asparagus on a baking tray lined with grease-proof paper
Coat the salmon and asparagus with olive oil
Sprinkle the grated parmesan cheese over the asparagus
Spoon the garlic & herb coating over the salmon
Place tray in the preheated oven for 15 minutes
When everything is cooked, serve together, with a wedge or two of lemon.
