Ingredients
450g/1lb pork mince
1 small apple, peeled, cored and finely chopped
1 small garlic clove, crushed
1 tbsp olive oil
Salt & Pepper
250g spaghetti or pasta, to serve
For the sauce
1 tbsp olive oil
1 onion, finely chopped
400g can chopped tomato
200g mascarpone cheese
Method
Put the pork mince in a bowl and stir in the apple, garlic and some salt and pepper. Shape the mixture into 24 balls, place on a greased baking tray, and chill in the refrigerator for 10 mins.
Once chilled, place in a pre-heated oven at 180 deg C, and bake for 20 minutes
While the meatballs are cooking, make the sauce. Heat the oil in a medium saucepan and add the onion. Cook until softened, around 2-3 mins, then pour in the tomatoes. Simmer for 15 mins, to reduce the liquid to approximately half. Using a hand-held blender, blend the tomato sauce until smooth, then add the mascarpone cheese and stir it in.
Meanwhile, cook the spaghetti/pasta following pack instructions, drain, and add the sauce. Gently mix the sauce in, to coat the pasta, then divide between your serving plates. Top with the meatballs and grate a little fresh parmesan cheese over the top.
Serve with some garlic bread.
